Lots of americans just work daily 8-12 hours with just 2 weeks of holiday a year, and all that until they are old.
How they do it? I would just kill myself. I have like 3-4 months off on average every year. I would crazy if i just had 2 weeks.

A standard 9-5 includes a lunch break but it's 30 minutes not an hour. You can of course take longer, but the unwritten rule is that you're expected to work longer to offset this. A standard working week is 37.5 hours of actual work with 2.5 hours of paid lunch breaks.

Almost everyone comes in a few minutes early due to having to plan for traffic.
If you're a salaryman, you work 9-5 with your lunch break included. If you're hourly, you usually work 9-5:30 or 9-6 with an unpaid, 30 minute or 1 hour lunch break.
I used to make all kinds of fun schedules though when I did workforce management. I designed a schedule for 3 days, 12 hours a day (I gave them the 4 extra hours for free for accepting such a schedule) on Friday, Saturday, and Sunday.
The reason is we needed coverage in a NOC 24/7 but only light coverage. So I just had two working that schedule from 7am - 7pm and 7pm-7am
I made all kinds of crazy schedules so I could fill gaps in schedules and because workers sometimes like weird stuff because they have lives that require different times to be available.

I was given complete control so I could do whatever I wanted as long as it was within the rules. We managed a 40% GP in that NOC because we were willing to do innovative stuff to assure coverage and meet SLA's.
I learned a lot from there about what employees are willing to do, what they won't do, and the flexibility that you can offer if you're both willing to meet halfway. It was a cool learning experience. Most companies aren't that flexible when it comes to schedules though.

Usually that only happens in the service industries at low level like retail or restaurant.
I used to have bids for shits once every half-year. The people who had the best performance rating during that time got to pick the best shifts. I would rank-order all employees by their performance metrics and then they would choose accordingly.
There was inevitably someone though who got a graveyard shift and really hated it. I would simply say "its not my fault, your performance dicates your shift".

Extremely rare here. Typically people wake up as late as possible and go straight to work (except maybe for moms taking kids to kindergartens), then in the evening they stay up doing what they enjoy. Most of this is just harrassment and not firing. I never fired anyone for refusing to come in for overtime with the exception of paid training which had to happen when we had trainers present. Even then though we would always notify them a couple of weeks ahead of time.
Most of what you hear is bullshit from tv and movie skits about being fired for such things.
Of course, the employers here can fire for any reason, but you'd end up with a mutiny on your hands if you behaved like that as an employer. It only happens in extreme cases and even then doesn't last very long.
