my personal favourite: - fry 500g of beef cubes in a pan or pot in high heat until they are nice and brown - reduce heat, add 2 large chopped onions and a few crushed pieces of garlic, fry until the onions and garlic get a nice color - add as much chipotle powder as you can handle, also salt and lots of cumin and a tablespoon of tomato paste, stir - add one liter of a dark beer and beef broth mix as well as a shot of coffee or espresso - simmer at low heat until the broth is reduced - add a can of kidney beans, one of black beans and a can of chopped tomatos - refine with a splash of vinegar, some oregano and a tablespoon of sugar you can add some corn as well, if you like its pretty easy to make, not much chopping and not much actual work overall. it should simmer at least two hours.

>>25538539 overall tips: chili con carne is about chili and meat, you shouldnt add too many vegetables. bell pepper, corn and - traditionally - even beans have no place in there. if you do it very oldschool, you just make a stew out of meat, chilies and spices and serve a mix of beans and bacon separately so anyone eating can adjust how hot they like their food

>>25538602 i completely agree with this recipe i would add a bit of dark chocolate (70+ % chocolate), at the same time as the coffee. it adds a good bit of depth.

>>25538645 yep, thats a nice touch, too you can as well use other chilies, but chipotle is the best, although it can be hard to get in europe you can also used smoked salt for that fiery, smokey flavor

>>25538602 >texas chili >kidney beans >oregano >beer >beef stock do you even know what texas chili is

>>25538693 tis true that texas chili doesn't have beans but the oregano, beer and broth should still be in there, right? at least according to this recipe, perhaps it isn't accurate https://www.spendwithpennies.com/texas-chili/

>>25538693 the only thign that really sets texas style apart is the absence of beans. besides of that, there is no real definition and every recipe is different and adds all kinds of stuff.

you know what actually fuck texas chili. this shit is good for some trying too hard motherfuckers. i want beans and tomatoes in my chili. also i dont have smoked chilis, i only have fresh ones >>25538602 this is a good starting point, i just got back from the store, i got some guiness
Bernd Sat, 01 Mar 2025 13:44:13 GMT No. 25538727
>>25538722 guinness is actually great as a broth base. other, light beers also work, but stouts or german kellerbier or schwarzbier are the best

>>25538715 >>25538709 texas chili is quite specific, you can be forgiven since you're euros and you're probably coming across recipes made by dumb single mothers who also don't know what it is. but, if you want to call it texas chili, it should be a very minimalist dish of steak cubes stewed in tomatoes and chilis. no onions, no beans, no garlic. the only spices you should be using are salt, pepper, a minimal amount of a sweetener and pepper based spices like paprika. the tomato sauce should be seen as more of a sauce than a stew.

>>25538769 i don't want to call it texas chili. it's just chili with cubed beef, veal kielbasa, beans and tomatoes i need to eat vegetables

>>25540182 it tastes pretty well too but it's too damned spicy. i added 300g of fresh chili and a bunch of dried little chilis
