Flicking a person attacking with lethal intent would do nothing. There are several ways to use a towel to improve your odds against someone with a knife but that isn't one of them at all. For someone very unskilled I would recommend wrapping the towel around their non dominant arm and using that wrapped arm as a shield to create and maintain distance between vitals and the knife. Not ideal but far more effective than flicking it at the attacker. Realistically they would lunge through the flick, grab on, then repeatedly stab before you got the chance to do a second flick. This is why I strongly advocate if you do knife defense you should have everyone gear up for sparing, put on goggles, then have the defender wear white and the attacker use a soft rubber knife with lipstick on the edge, or a washable marker. Then give the attacker the goal of putting as many marks on the defender as possible in the time limit and while the defender tries to survive the time without any marks to their vitals.

It's better than nothing. Especially if the tower is wet.
