When i put sugar, yeast into ans fruit juice and let it ferment hobo style for a few days, can i just put in some more yeast and sugar to raise the alcohol-level even more?

You can try, but you're better off starting a separate batch because the higher the ethanol fraction of the mixture becomes the less efficient the yeast become. If you want to make sure you get all the potential out of a batch you can distill off the ethanol from the mix and then rerun it.
