Freezing and toasting is probably the best thing you can do to store fresh bread for a long time. It's not great, but better than the alternatives. The result is very different from fresh bread, but works well for certain uses.
What I consider good bread is crunchy on the outside and soft on the inside. A proper Krustenbrot (wheat / rye mix) stays good for almost a week, with only the crunchy part getting thicker and harder to slice (pre-sliced bread dries too quickly). Proper storage is a paper bag or special clay pot. They let out the moisture slowly (crunchy exterior) but not too slowly (everything dries out).
