How come the Goymoney can count up all their votes in a matter of house and meanwhile California is still counting votes from an election that took place months ago?

I have to ask back how in le fug it is difficult? You get the ballots and a couple of previously registered and instructed volunteers and you get cracking. Then the results are reported to a central place, summed up, and done.
OK, one big difference is that you vote for like 20 different things, but here, the federal election is just two votes per person: a direct candidate from the voting district and a vote for the nation-wide overall percentage. Yes, the totals of these two ways of voting can be somewhat incompatible - there are rules for reconciling them and there are sometimes paradoxical effects because of these rules.

California allows vote by mail, which means as long as the date is postmarked by election date, the vote still counts.
The cutoff isn't for when the ballot arrives by election night.
Our secretary of state system means we have way way more voting centers than most places in the nation. I never queue up to vote.
